To kick off Melbourne Food and Wine Festival, Melba Restaurant will team up with Peruvian cuisine master, Alejandro Saravia for a pop-up event.


For one night only, guests will experience a selection of Alejandro’s signature dishes, each infused with the flavours inspired by his South American roots.   


In addition to running his own critically acclaimed restaurant, Pastuso, Alejandro has a list of past successes including his restaurant, Morena in Surry Hills. And if that isn’t impressive enough, he has worked in the world-class kitchens around the globe, including Heston Blumenthal’s The Fat Duck, in London.

It’s a night not to miss, book early to avoid disappointment.

Buffet Menu Highlights:
ALPACA CROQUETTE
Slow cooked alpaca shoulder served with sundried Andean chilli sauce.
Alpaca is a staple meat from the Andean Sierras of Peru, The Alpaca meat its source locally from Illawara Prime Alpaca located in Berry NSW. Alpaca meat it’s consider a delicacy for its delicate flavour and texture.

ROLLO
Braised Wagyu beef spring roll with tumeric and mustard mayonnaise.
This dish brings the Spanish influence in Peruvian cuisine. The Spanish brought to Latin America a selection of spices from the India and Arab countries.

CEVICHE PERUANO 
Ruby red snapper cured in lemon juice with caramelised sweet potato

CEVICHE NIKKEI
Thin slices of yellow fin tuna, soy and Peruvian Andean chilli sauce, spicy avocado and pickled daikon.

Ceviche 21 
Scull island prawns, emulsify tigers milk and pickled seaweed and white fungi.

OSTRAS
Angasi oysters, salmon roe and coriander dressing.

ROAST
Pit roast pork neck
Braised lamb shoulder
Peruvian yellow potatoes roasted in duck fat.
Served with traditional Andean Peruvian sauces.

Seco: Coriander and dark beer sauce  
Adobo: A reduction of caramelized onion and sundried Andean Chillies sauce.

Tres leches – Traditional Latin American sponge cake soak in a mix of   milks, served with raspberry couli.
