August 2021…. 2021 may not have been the year anyone planned but this provides more reasons to make this year’s festive season extra special. The hotel’s new Executive Chef, Thomas Rappl has been busy road-testing recipes with his kitchen brigade and has put the finishing touches on this year’s menus at Melba Restaurant.

“Traditional favourites such as smoked Christmas ham, whole roasted turkey and Moreton Bay bugs will be served, plus on Christmas Eve, Christmas Day and New Year’s Eve, diners will be served a decadent seafood stand on arrival laden with half a lobster, king crab, snow crab, freshly shucked oysters, scallops served on the half shell, New Zealand mussels and a refreshing white fish ceviche,” explains Rappl.

Melba Restaurant’s festive menus cater for every member of the family from die-hard traditionalists to trend-seekers, discerning diners and picky eaters. This year’s menu also features a tuna poké bowl, sushi and sashimi, an Asian-style poached chicken salad with green mango, chilli and a lime and coriander sauce and baked salmon in puff pastry with a lemon butter and salmon roe sauce just to name a few dishes on offer.

Melba Restaurant’s famous open Indian kitchen complete with tandoor oven will be serving shish kebabs made with lamb, chicken, beef, prawn and fish as well as lamb Rogan Josh, chicken tikka masala and everyone’s favourite naan made-to-order.

The dessert station will be an indulgent mix of traditional Christmas pudding with choice of rum-infused custard or Vanilla Anglaise, mince pies, stollen, panettone and Black Forest Christmas log alongside modern dishes including tonka bean brûlée, Moroccan rice pudding with baby figs and apricots, Biscoff-inspired cinnamon, cardamom and ginger tart with spiced frangipane and cranberry jam and cannoli filled with orange and chocolate chip flecked ricotta to mention just some of the dozen desserts on offer.

There are over 10 international cuisines being showcased at Melba Restaurant including Indonesian, Chinese and Middle Eastern. The menu is designed to appeal to a wide variety of palates and caters for those with dietary requirements and preferences.

Lunch and dinner over Christmas Eve, Christmas Day, Boxing Day and New Year’s Eve bookings are available from $125.00 per adult inclusive of seafood stand, entrée, main course and dessert.
