February 2020…. It could be said that high tea is one of the most elegant times of day. Some would agree that it’s important to always dress up for high tea. One thing is for certain, during VAMFF in March, Aria Bar & Lounge will host what is arguably Australia’s most fashionable high tea.

As a proud partner of Virgin Australia Melbourne Fashion Festival, The Langham, Melbourne is hosting a series of seriously stylish high teas over two weekends on Saturday 7 and Sunday 8 March and Saturday 14 and Sunday 15 March.
To help fit in with the busy schedule of a fashionista, the VAMFF Designer Dessert series of high teas will be offered twice a day, from 11.30am until 1.30pm and from 2.30pm until 4.30pm.

The hotel’s Executive Pastry Chef, Markus Bohm has taken inspiration from the runway to create a menu of chic cakes that are almost too pretty to eat. In particular, Chef Bohm has been inspired by the fashionable dresses designed by Karen Gee, with whom The Langham, Melbourne has a partnership. Karen Gee’s new season’s lookbook and palette includes shades of lavender and forest green, plenty of white accents and sharp silhouettes, shades of Langham pink and the odd flower, ruffle and feminine bow.

The edible translation of these dresses to dishes include savoury gin and kaffir lime-cured Tasmanian salmon with crème fraîche and Rubicon River salmon pearls on blinis, spanner crab with miniature choux pastry, feta crostini with baby basil leaves and confit tomato and everyone’s favourite: traditional chicken and chive ribbon sandwich.

To keep energy levels high, there will also be petite quiche Florentine and summer truffle and King Brown mushroom with Gruyère béchamel crepe roulade.

To satisfy everyone’s sweet tooth, Aria Bar & Lounge will be serving over a dozen sweet treats including an adorable ruby red chocolate handbag with blueberry ganache, Langham pink strawberry macarons, a chocolate tulip with a cassis mousse and a strawberry Champagne and yoghurt custard tart plus a Karen Gee-inspired vanilla and tonka bean shortbread dress cookie.

Chef Markus has also squeezed in his signature Glenmorangie chocolate cherry cake and a citrus verrine finished with tangerine pearls. Who said pearls were just to be worn?

The hotel’s famous chocolate fountain will also be a strong drawcard as well as the pastry kitchen’s much-loved scones served with fresh Yarra Valley cream and rose petal preserve.

$89.00 per adult includes a glass of premium sparkling wine on arrival and choice of Wedgwood loose leaf tea, espresso-based coffee or hot chocolate. A potent pink VAMFF cocktail ($22.00) will also be on offer. It’s a heady concoction inspired by the hotel’s vintage pink taxi.
